There are so many great roads in Colorado it is hard to single out one, but one of my favorites is Colorado 92 running along the north rim of the Black Canyon of the Gunnison. Lots of twisties and great views you don't get in a forest like back east. Don't get me wrong, I love the roads within a days ride of Gatlinburg, but Colorado is my favorite place to ride.

Independence Pass east of Aspen.
McClure Pass west of Aspen
Loveland Pass near Dillon
Trail Ridge Road in Rocky Mtn Natl Park
Peak to Peak Highway south of Estes Park to Idaho Springs
Mount Evans Highway (Highest pave road in North America--14,000 ft)
